(yeah, technically it’s broth—but that’s a quibble).

This stock is made once a year, pulled from 2025’s freezer collection of beef marrow bones and osso buco shank cuts, built on a fresh French trinity, then fire-roasted with herbs before a two-day simmer to extract every last gram of protein-rich flavor.

The result? Deep, savory, gelatin-heavy stock that sets up like Jell-O and eats like power.
